The FG-400PR professional food grinder has die cast aluminum housing and over sized die cast hopper which holds up to 5 pounds. The powerful 380 watt motor grinds up to 2.9 pounds of meat per minute making it ideal for making sausage. Make appetizers, pates, relishes, sandwich spreads, hamburger and other ground meat. Mom, who is getting older, still makes everything from mince meat for pies to filled sandwiches for the multitudes, but was having a hard time cranking the old grinder or doing it by hand. She loves this machine! She finds it very easy to use and so far has handled everything she has thrown down its shute. She says clean up is a snap. Haven't used the sausage stuffing attachment yet. I purchased this machine last weekend and ground about 10 pounds of 2 different cuts of beef. The actual grind speed is good, and I wore earplugs so the noise didn't bother me. What I had a problem with was the grey sludge that comes out with the ground meat. I didn't read about this problem in any of the reviews for this machine, though I did read about this happening with some other machines. However, my impression was that it should stop after a couple of pounds of meat had been ground. The sludge with this machine persisted all the way thru the entire 10 pounds of meat. It got especially bad when the plates got gummed up at all with sinew and fat that couldn't be cut out of the chunks of meat before grinding. So I kept stopping the grind and cleaning out the plates, which made the grind VERY time consuming and which also did not completely stop the sludge problem, only made it a little less bad. I have a message in to Nesco customer service to see if they have any thoughts about how to stop the sludge. If they don't, this machine will probably go back.
I also think they need a tool to clean out the plates that should be included with the machine. Fortunately, I have a tool in the kitchen drawer with a very narrow, pointy tip that I was able to use to poke the gunk thru the holes in the fine and medium plates, or I would never have been able to get them clean. I don't think running bread or crackers thru would have pulled that gunk back thru the holes.
Another thing that they don't tell you is that you can't go from the coarse grind directly to the fine grind. You will need to run the meat thru a medium grind as well. The machine really struggles and the grind is agonizingly slow going directly from coarse to fine grind. Also, the fine grind seems a bit too narrow for hamburgers, in spite of what they say. Next time, I would probably do a coarse grind and a medium grind and call it good.
The jury is still out for me on this machine. I had planned on getting the #8 LEM model, which is about the same price and is manufactured in the USA by a company specializing in meat grinders for game--so you know it can handle beef and chicken well. Unfortunately, these are back ordered until September and I didn't want to wait that long. So, I decided to try the Nesco model. That might have been a mistake.
Update: Nesco customer service says that the heat compression in the machine can turn the fats in the meat into a "dark-colored substance" (a.k.a. sludge) and they recommend letting the machine cool after a couple of pounds of grinding. Hmm. A) I'm not sure I believe that's the cause of the sludge; B) It did this all the way thru the grind. From almost the start all the way to the end, including after taking the machine apart several different times and cleaning parts and reassembling and starting again--which would certainly count as "letting it cool" time. Not really a satisfactory answer. Maybe this is just part of what happens with meat grinders. I've never had one before this, so I can't say. But I intend to find out! Meanwhile, take this information into consideration if you're looking at this grinder.
